What are my responsibilities?
As the Bread Baker Chef, you will be responsible for producing high-quality fresh bread daily for Janine Bakery, a front house bakery concept within the hotel that already specializes in pastry and baked goods.
The role focuses on developing and maintaining a consistent sourdough bread program that complements and completes the bakery’s existing pastry offer.
The Bread Baker Chef will work closely with the Head Bakery Chef to ensure efficient production planning, optimal use of space, and high product quality.
The role requires flexibility to adapt production methods according to the available equipment and workspace, while actively contributing ideas to improve workflow, productivity, and bakery operations.
Key Responsibilities
Produce fresh sourdough bread daily for Janine Bakery, maintaining proper fermentation, proofing, and baking standards.
Manage and maintain the sourdough starter culture to ensure consistent flavor and quality.
Develop a bread selection that complements the bakery’s existing pastry and viennoiserie offer.
Produce a range of breads such as sourdough loaves, country breads, baguettes, sandwich breads, and seasonal specialties.
Coordinate bread production to support bakery service, hotel outlets, and special events where required.
Work closely with the Head Bakery Chef to optimize bakery production, staffing (manning), and workflow.
Demonstrate flexibility in adapting the bread production process according to the available space, equipment, and bakery layout.
Provide constructive feedback and recommendations on how to improve bakery efficiency, workspace organization, and production flow.
Contribute to the development of the bread program as part of the overall bakery concept.
Ensure high standards of food safety, hygiene, and cleanliness in the bread production area.
Monitor ingredient quality, maintain stock levels, and assist in ordering baking supplies.
Support the continuous improvement of product quality and consistency.
Be accountable on following recipes card, costing and internal SOP.
Qualifications
Professional training in baking, pastry, or culinary arts.
Minimum 2–3 years experience in artisan bread baking, preferably with sourdough.
Experience working in artisan bakeries, hotel bakeries, or specialty bakery concepts.
Strong knowledge of fermentation, dough handling, and baking techniques.
Understanding of food safety and hygiene standards.
