The purpose of the mise-en-place chef role at Brasserie Ambassade is to ensure that our kitchen is well prepared for each day. You will mainly work daytime shifts and will be responsible for a large part of the kitchen’s mise-en-place. You will also support the breakfast and lunch teams where needed.
You make sure that ingredients and preparations are ready on time, work neatly and in a structured manner, and help maintain the consistent quality of our dishes. This makes you an important member of the kitchen team. Together with your colleagues, you ensure that each service runs smoothly.
Daily responsibilities
Mise-en-place: Preparing, processing and organising ingredients and products for the different areas of the kitchen.
Breakfast support: Assisting with preparations and tasks related to breakfast and the breakfast buffet.
Lunch support: Supporting the kitchen team during lunch service and, where needed, taking responsibility for tasks independently.
Kitchen preparation: Ensuring that the kitchen and service teams are well prepared for the day and the next service.
Quality control: Checking products and preparations for quality, flavour, freshness and presentation.
Stock: Identifying when products need to be replenished and keeping storage areas neat and organised.
Hygiene: Maintaining a clean and organised workstation and working in accordance with the applicable HACCP guidelines.
Teamwork and collaboration
You work closely with the breakfast and lunch teams and support colleagues where needed.
You share your knowledge and experience with colleagues and are open to learning new things yourself.
You communicate clearly with the rest of the kitchen team about mise-en-place, stock and any important details.
You are someone the team can rely on and you recognise what needs to be done.
Who are you?
Experience: You have experience working in a professional kitchen. Experience in a hotel or restaurant is an advantage.
Organised: You enjoy working in a structured way and make sure your mise-en-place is neat and ready on time.
Independent: You are able to work well independently and organise your own tasks throughout the day.
Team player: You are happy to step in and help with breakfast or lunch when needed.
Quality-focused: You work accurately and have an eye for flavour, freshness and presentation.
Hygiene-conscious: You work cleanly and understand the basic rules of food safety and HACCP.
Flexible: You enjoy working mainly during the day and are also available at weekends according to the schedule.
