As Chef de Cuisine at Restaurant Waves in the prestigious Grand Hotel Amrâth Kurhaus in Scheveningen, you are responsible for the daily management of the kitchen. You inspire and develop your team, ensuring that every guest enjoys a culinary experience befitting an iconic five-star venue. You report directly to the Executive Chef.
In the role of Chef de Cuisine at Restaurant Waves, you lead an ambitious kitchen team on a daily basis within one of the Netherlands' most iconic hotels. Restaurant Waves stands for high-quality gastronomy, craftsmanship, and a contemporary culinary experience. You are responsible for daily operations, maintaining quality standards, and actively contributing to the further development of the restaurant concept.
You maintain a visible presence on the floor, manage the team, and ensure that every service runs smoothly. Together with the Executive Chef, you work on menu development, quality improvement, and achieving commercial objectives. This multifaceted leadership role combines operational management, creativity, and a guest-focused mindset. No two days are the same in the bustling heart of Scheveningen.
What will you be doing?
In this role, you are responsible for the daily management of the Restaurant Waves kitchen. Your duties include:
● Leading, coaching, and motivating the entire kitchen team and fostering a positive, professional working atmosphere.
● Safeguarding the quality, presentation, and consistency of all dishes in accordance with the standards of Restaurant Waves and the Grand Hotel Amrâth Kurhaus.
● Overseeing daily operational planning, mise-en-place, and efficient kitchen staffing.
● Collaborating with the Executive Chef on menu development, seasonal changes, recipes, and culinary innovations. ● Oversee compliance with HACCP guidelines, food safety standards, hygiene protocols, and all applicable laws and regulations.
● Manage purchasing, inventory, and cost prices, while minimizing waste.
● Train, mentor, and develop staff and trainees, focusing on professional craftsmanship and personal growth.
● Collaborate closely with the restaurant manager and other departments to provide guests with an exceptional culinary experience.
● Report to the Executive Chef on operational performance, quality, staff development, and opportunities for improvement.

● You have demonstrable experience as a Sous Chef or Chef de Cuisine within a high-quality restaurant or hotel.
● You possess strong leadership qualities and know how to inspire, develop, and motivate a team.
● You have a passion for gastronomy and are continuously seeking improvement and innovation.
● You have strong organizational skills, maintain an overview during busy shifts, and easily take responsibility.
● You have extensive knowledge of HACCP, food safety, and cost control.
● You are flexible and have no problem working evenings, weekends, and holidays.
● You are proficient in Dutch; proficiency in English is a plus.
