ROYAL98, an acclaimed international food concept located in the heart of Amsterdam since October 2016, is seeking a dynamic Sous Chef to lead our kitchen team. Our menu highlights international dishes combined with authentic Italian pasta and wood-fired pizzas, complemented by a warm, friendly service.

We share our vibrant locale with our esteemed neighbor and sister, Swissôtel Amsterdam, for whom we provide breakfast and room service. After breakfast we start dining all day. As Sous Chef at ROYAL98, you will be helping lead our talented kitchen team in delivering exceptional quality and consistency in every dish. Together with our other Sous Chef, you’ll make sure the kitchen runs efficiently and smoothly. You will:
Support daily kitchen operations and team supervision
Work together with our other Sous Chef to ensure smooth service and coordination
Assist with menu planning, recipe development, and cost control
Maintain high standards of food quality, presentation, and hygiene (HACCP)
Train, motivate, and guide kitchen staff to reach their full potential
Ensure proper inventory management and ordering procedures
Collaborate with the service team to guarantee a seamless guest experience
Contribute to a positive, respectful, and passionate kitchen culture
Who are you?
Minimum 2 years’ experience as a Sous Chef or strong experience as a Chef de Partie ready for the next step
Solid knowledge of culinary techniques and kitchen operations
Strong sense of responsibility and teamwork
Experience with HACCP and food safety procedures
Ability to perform under pressure while maintaining quality
Excellent communication skills and a hands-on attitude
Fluent in English; knowledge of Dutch or other languages is a plus
Passion for fresh, quality ingredients and international cuisine
