What to expect

All chefs in our restaurant are Japanese and working closely with our international service team.

As Sous Chef you are, together with the (Executive) Chef, responsible for the daily management in the kitchen. This includes supervision and training of the kitchen staff. You will be responsible for the conception and preparation of various dishes at a high level, the execution of mise en place activities, the cleaning of the kitchen according to HACCP regulations, the optimal functioning of the assigned partie and the development of new items on the menu.

 

Your main tasks will be: 

  • Train kitchen associates on the fundamentals of good cooking and excellent plate presentations
  • Manage associates progressive discipline procedures for areas of responsibility
  • Manage department controllable expenses including food cost, supplies and equipment
  • Assist in all menu developments and menu proposals for Japanese events
  • Conduct appraisals / evaluations
  • Check quality of raw and cooked food products to ensure that standards are met
  • Demonstrate new cooking techniques and equipment to staff
  • Supervise and coordinate activities of cooks and workers engaged in food preparation
  • Support the Sushi Chef
  • Provide guests with information about Japanese cuisine

 

 

What do we offer?

  • Contract:         1 year with the possibility of extending. We want you to stay!;
  • Salary:            Starting at group 7, but is depending on your work experience, Click here for the salary scale;
  • Bonus:             1 week salary if when the hotel reaches the budgeted GOP (Gross Operating Profit)
