Assistant Hygiene Manager - Amsterdam

Conservatorium Hotel is looking for an Assistant Hygiene Manager join our hotel operations team, reporting directly to the Hotel Manager.

As Assistant Hygiene Manager you will be responsible for the following duties:

• Ensure compliance with the seven HACCP principles across all Food & Beverage departments, managing HACCP plans for all served items.

• Maintain adherence to local and European food safety and hygiene regulations, keeping all back-of-house areas and outlets audit-ready with complete documentation.

• Implement and document safe, effective cleaning procedures in coordination with chemical suppliers and pest control services.

• Monitor hygiene through regular audits and microbiological/ATP swabbing, maintaining a scheduled cleaning plan for all areas and equipment.

• Promote health and safety awareness, ensuring proper use of protective equipment and timely corrective actions per FLHSSE standards.

• Develop and maintain Standard Operating Procedures for food handlers and production, ensuring staff are trained and records kept per the Safe & Sound program.

• Stay updated on market innovations related to food safety and control to continually enhance practices.

As Assistant Hygiene Manager we expect from you:

• Diploma or degree in Food Science, Hospitality Management, Environmental Health, or related field desirable

• Certification in HACCP or Food Safety Management is highly preferred.

• Minimum 2 years’ experience in hygiene, food safety, or sanitation roles within the hospitality or food service industry and experience working with HACCP systems and conducting audits.

• Strong knowledge of local and international food safety and hygiene regulations.

• Ability to work collaboratively across departments and handle corrective actions efficiently.

• Proactive and solution-focused mindset. We are looking for a team player with a positive attitude.

• Ability to work under pressure and meet deadlines and a strong sense of responsibility and integrity.
