We’re looking for an experienced and hands-on Executive Chef to lead the kitchens at Hyatt Regency Amsterdam.

This is a role for someone who enjoys being present on the floor, working with the team, and shaping the day-to-day culinary experience.

You will be responsible for all kitchen operations across the hotel, from Mama Makan (our signature dining destination), bar, in-room dining and events.

You will set the tone for the team, the food, and the standards we work to.

What you’ll be doing

  • Overseeing all culinary in the hotel, including restaurant, bar, events and room service

  • Keeping a close eye on quality, consistency and presentation across all venues

  • Driving menu development with a focus on seasonality, sustainability and local sourcing

  • Managing food cost, labor, purchasing, and stock control responsibly

  • Making sure everything runs in line with HACCP, hygiene standards and Dutch regulations

  • Working closely with F&B and other departments to make the operation run smoothly

  • Experience & Expertise

  • Minimum 8 to 10 years of culinary experience, including 3 to 5 years in a senior leadership role – either as Executive Chef, Executive Sous Chef, or Head Chef

  • Proven experience managing multiple venues (restaurants, events & in-room dining) in an upscale or high-volume environment

  • Demonstrated success in menu creation, food innovation, and concept development

  • Solid kitchen financial and operational judgement

Qualifications

  • Degree, diploma, or certification in Culinary Arts or Hospitality preferrable

  • Fluency in English required; Dutch is an advantage

  • Prior experience within an international hospitality brand
